Schmidtty's Christmas Tradition
 
Every year at this time, my parents household wreaks of Bacardi Rum. And no, it's not because we're drinking it - we're cooking it!
My mother bakes more than 100 rum cakes each year and has since I can remember. They are our gifts to friends and family and I've taken on the tradition in recent years. And while I'd love to make a cake for every one of our wonderful viewers, I'm going to give you the recipe so hopefully you can start a tradition of your own!

Schmidtty's Rum Cake Recipe
Ingredients:
Bundt cake pan
4 eggs
1 box of yellow cake mix
1/2c water
1/2c oil
1/2c Bacardi Rum
1 small box of instant vanilla pudding
Bundt cake pan
Handful of chopped pecans
 
Glaze ingredients:
1/4c water
1c sugar
1 stick of butter
1/2c Bacardi Rum
 
Instructions:
Heat oven to 350 degrees.
Grease and flour bundt cake pan, spread pecans along bottom of pan.
Mix eggs with cake mix and pudding. Add water, rum, and oil. Blend until mixed.
Pour batter in pan. Bake for 30-35mins.
Let cool in pan for 5 mins. Invert onto serving platter.
Glaze instructions:
In a sauce pan, add 1/4c water, 1 cup of sugar, stick of butter. Stir together and bring to boil. Let boil while constantly stirring for 5 minutes. Remove from heat. Add 1/2 cup rum, stir. Glaze away!
